Phone number first, because everyone knows theirs by heart and nobody spells their own name wrong.

2 They confirm it's them

Matches come back masked, first name and last initial only, so nobody standing at the counter learns your customer list.

3 That's it

New customer? Two more fields and they're in the system. Either way the front desk already knows they're here.

The kiosk is a plain lookup: it finds the number or it doesn't. Nothing about a customer's identity is guessed, generated, or inferred. That part of your shop stays boringly predictable, on purpose.

Cable cut, router down, provider having a morning: the kiosk notices and switches itself to an offline form. Customers still sign in, the shop keeps moving, and everything syncs when the connection comes back.
